``Hatsuhana's conservative approach to the cuisine makes it a useful benchmark for comparisons. They get the details right. Pieces are of average size because that's the right size; nori is always toasty crisp, even around maki rolls; the egg sushi is delicate and light; prices are stiff. The 48th Street branch is the HQ, the other is basically a lunch spot.''
